Related to the slotted headstock thread, how thick do you make your classical headstocks? I see that a lot of the tuners (3 on a plate) are about 17mm wide. So, do you make the headstock as thick as the tuner plate and then add the veneers and overlays (about 2.5mm on each side)? What do you guys do?

Make sure you have your tuning machines in hand and measure them carefully. They are not all the same. However, somewhere in the 20mm range is near the finished thickness necessary.

I went from 19 to 21.5. Thicker when using a hardwood back on the headstock. The important thing is to have the tuner plate, 17mm or whatever your particular model is, centered on those 19-21.

I make mine 20mm for a standard head and 21mm for a
veneered front & back head.
As stated above measure the plates and center them on the head side.

Including the veneer, my classical headstocks have been 20 - 21 mm, and Sloane and Gotoh tuners at about 18.25mm fit just right when centered. I wouldn't go less than 20mm if it were me.
