Winter is the best time for gluing braces, though. Low humidity.

A big part of what gives those old instruments their sound is the super low bridge height (and thin/lightly braced soundboard, which is possible because of the low bridge torque). I built one based on this Torres guitar with 5/16" string height measured just in front of the bridge, and I love the tone. Sort of half way between baroque and modern.
