My rule of thumb used to be 0.070" for back and sides and for the soundboard if it is mahogany. Spruce would be a tad thicker (maybe 0.080").
Recently I have thickened my sides to 0.080".

What plans are you using?

Good luck

The top/back and sides varies quite a bit depending on which species your using.

I have some Black acacia, maple and Zebrawood. I already have most the body done on a zebra wood concert uke. I took it down to .078 going by how it felt when slightly flexing it. I have some engleman spruce I am planning for the top. Its 3/16 now. I haven't thicknessed it yet.

For a concert size I'd go closer to 0.07" for the sides for bending. The back is fine at 0.078.
For a typical 2-fan brace concert top in spruce, I'd aim for 0.08".
