Looks like the Indonesian rosewood that Allied was selling some years back. Not sure if they ever said the actual species name.

Thought you'd get there eventually.

The name catgut is confusing. There are two explanations for the mix up.

Catgut is an abbreviation of the word cattle gut. Gut strings are made from sheep or goat intestines, in the past even from horse, mule or donkey intestines.

Otherwise it could be from the word kitgut or kitstring. Kit meant fiddle, not kitten.

If it is very non-porous and somewhat hydrophobic my vote would be goncalo alves.

It does look a bit like Indo RW, your picture is pretty warm tho, so it's tough to pick out all the colors. It could also be Pau Ferro/Bolivian RW. Attached is an Indonesian RW I got from Lance, I believe he got it from Allied.

Ok its confirmed its indo rosewood and Im 99% sure I got it from lance and yes it turned into a potato chip. So I'll prob use it as an Ukulele set rather then guitar.

Sorry to hear that and also it's good to know! I didn't know if it was my wood storage room or setup or what. Mine isn't usable at all really. I could cut the sides into binding or headplates. That's about it.

Another possibility might be to laminate it to another piece of wood.

Following what clay said, H. mahog veneer is not expensive, stable . and an exc, tonewood. Sometimes I use patio stones from walmart stacked 4 high each half side with 1/4in plywood on the bottom to laminate . Cheap an effective. Works at above 70 deg F

Thanks for the suggestions. For my set I’ve tried a number of flattening techniques, but none really helped. It is the back plates which are twisted, the sides are workable. I’m not likely going to make a laminated back, but never say never. :) It’s a shame too because it is a beautiful set.

Is it even necessary to flatten it? Once the braces are on and it's attached to the rim, I doubt there would be a problem.

"Twisted" is usually a little easier to work with than "cupped". If you can untwist the plates by hand then bracing can help them hold their shape. Depending on how you layout the work you can often cut out some of the twist by joining the least twisted edges and putting the area of greatest twist to the outside of the (narrower) upper bout. David's idea of using it for smaller instruments is also a good way to go. Sometimes we lose site of the fact that not everything has to become a guitar.

I would think flattening as best as possible and then bracing would be good enough too.
