So how do you make a volute on the back of the guitar neck head? Any good jig ideas?

Assuming you are talking about the Martin dart style of volute, mine is a small piece glued on to my scarf joined neck

I’ve been working on this one. It’s designed to ride in the dado of a table saw. The knobs adjust the thickness of the peg head for paddle or slot head. The neck attaches with screws using the same holes that were used for the peg head template. After the two cuts are made, a hand saw will be used to separate the waste before carving the volute.
