Hi Ken, based on your interests I'd recommend building a guitar on Torres' smallest shape. Roy Courtnall has a plan drawn that's included in Making Master Guitars or can be purchased full sized through LMI. While the guitar the plans are drawn from (SE-117) has a very petite scale length of 604mm Torres also used this shape for guitars with 610mm (SE77) and 635mm (FE-07) scale lengths.
Here's an homage to FE-07 I made last year, the spruce soundboard was packing material from Rivolta, the cypress was B grade from one of my Spanish suppliers, and all other materials were inexpensive/salvaged from the scrap bin. Despite that it sounds quite good, somewhere between a typical romantic guitar and a more modern classical guitar. The construction is rather simple too as it only has 5 fan struts and no closing bars (according to the Romanillos book), I think I spent 4 or 5 days building this.
