In accordance with what Hesh is saying, we all know that working musicians play guitars in some of the most humid environments. Visualize, a noisy tavern, liquids everywhere, multitudes of sweating bodies ( hey get yer mind outta the gutter ) and I suspect the humidity gets pretty high. Do that a number of times and the bridge may surrender its grip. having said that, I use fish glue to glue bridges on my personal guitars. For a well paying client, I wouldn't take any chances.
