I just bought a new Titebond glue for trim and mouldings. Its supposed to have a quick tack, dry clear, but NOT for anything structural.
I've got some crown moulding to put up, so hopefully it works better than regular glue.

Molding & Trim is a really nice product for what you're doing. It has a viscosity of ~30,000 cps which is about 10 times thicker than typical wood glues so it won't run.
