I've tried it both ways and I cannot replicate the extreme surface flatness of a finish that is sanded out to a high grit and then lightly buffed to one where most of the polishing is in the buffing. I might be doing it wrong, but I tried. This is being very picky of course but it was my observation. I imagine it matters a lot on the type of finish too.

I dry sand up to 1000 with abranet and then wet sand above that, usually to 2000. I have been using waterbase finishes, EM6000 and EnduroVar.

I also cannot replicate Brian's 2.5 hours!!!! Wow that seems fast.

I really love this stuff. One piece will work for the whole guitar each grit, at least on nitro for me. No load no water. They have these little hard cards for their sticky backed paper to go on for the nook's and cranny's. My friend who is a car painter gave some to me a few years ago and it's all I use now.
