I am about to buy a board and was wondering what the minimum side length would accommodate a Small jumbo or OM sized guitars?...usually i let me sides be at at least 32" but i was curious if i could get by with anything less? that way i can plan how to resaw the board.

I have a 000/OM plan in CAD and the sides measure 29-25/32" in length. It's based on a 14 fret to body Martin style OM, which is 15-1/4" wide at the lower bout. You could probably get by with a little shorter sides if you got creative around the tail wedge and/or neck heel.

Do you use an outside mold? Put a piece of tape along the inside of the mold. This will give you the exact side length.

My OLF SJ mold measures 29 9/16".

Just remember, those are measurements for a full bouted guitar, not a cutaway.
