The name catgut is confusing. There are two explanations for the mix up.

Catgut is an abbreviation of the word cattle gut. Gut strings are made from sheep or goat intestines, in the past even from horse, mule or donkey intestines.

Otherwise it could be from the word kitgut or kitstring. Kit meant fiddle, not kitten.

What i'd like to know - Did it work?
The bridge doctor seems like a "last resort" fix for a too weak top and bracing combination, but some people swear by it and build guitars which use it as original equipment.
Sometimes these "Bubba braces" actually do work, although they make us grin (or grimace if it's a nice instrument) a bit when we find them.
